Do you have a food that whenever you see that it’s included in a meal, you can’t resist but make it/order it/dream about it? For me, it’s Sweet Potato. And these buns are what started that love for them! Sweet potatoes just make every dish better- they’re loaded with vitamins, a beautiful orange color, break up any savory dish with a bit of sweetness, and improve the texture of everything they’re in, including these buns!
Once you make these, you’ll never go back to store-bought buns. They are so light, fluffy, and are just plain beautiful. This recipe makes 6 full-sized buns, (though I bet you could stretch it to 8 medium-sized buns if you need), or 12 slider buns or rolls. They’re so versatile and elevate everything you serve them with!

Sweet Potato Buns
Ingredients
- 2/3 cup Warm Water
- 2 tsp Yeast
- 1 Tbsp Sugar
- 3/4 cup Mashed Sweet Potatoes
- 1/4 cup Honey
- 2 1/2-3 cups All-Purpose Flour (until you can handle the dough without it sticking)
- 1 tsp Salt
- Butter, for brushing on top
Instructions
- In the bowl of a stand mixer, add the 2/3 cup warm Water, 2 tsp Yeast, and 1 Tbsp of Sugar. gently mix together, then let it sit until it starts to foam.
- Now add the 3/4 cup Mashed Sweet Potatoes, 1/4 cup Honey, 2 1/2-3 cups of Flour, and 1 tsp of salt and combine on low until all the ingredients are mixed in. Then process on the highest speed for 3 minutes.
- Form the dough into a ball, then place in a warm environment for 1.5-2 hours, until doubled in size.
- After it's done with it's first rise, punch down the dough and place it on a lightly floured surface. Divide into 12 equal pieces if using for sliders, or 6 if using it for burgers. Shape them until the tops are smooth, pulling the dough tight on the bottom to create tension and avoid them flattening. If using for sliders, place in a greased 9x13 pan. If making Hamburger buns, place each one a greased cookie sheet, placing them about 2 inches apart. Gently press down each bun, to ensure it doesn't dome up too much while baking. Let rise for another 30 minutes.
- While the dough rises, preheat the oven to 390º F, and bake for 15-18 minutes, until just barely starting to brown and turn a darker orange. As soon as it comes out of the oven, brush butter on top of each bun. Let cool for at least 10 minutes before cutting into them. Best enjoyed fresh.
