So my husband LOVES salsa. In fact, for one of our first Valentine’s day together, before I was into making everything from scratch, my gift to him was finally making him some, because back then it felt like a big deal to do. Thankfully, I make salsa now on a regular basis now that I’ve developed this Chipotle Lime Salsa a few years ago. Lime is one of my absolute favorite flavors, but add some smokey chipotle too? Slam. Dunk.

If you saw the Pineapple Tomatillo Salsa I just posted, you’ll know that that was easy, but this is even easier! You truly just grab the ingredients and blend it all. It’s a very low-maintenance recipe, it’s easy to have it on hand on a regular basis!

Chipotle Lime Salsa

Chipotle Lime Salsa

Yield: 48oz (6 cups)

Ingredients

  • 28oz diced tomatoes (drained)
  • 1 roughly chopped onion
  • 1/2 cup chopped cilantro
  • 1/3 cup Lime Juice
  • 2 tbsp minced garlic
  • 2 chipotle peppers (depending on your spice tolerance)
  • Salt and pepper to taste.

Instructions

  1. Add all of the ingredients- 28oz of diced canned Tomatoes (drained), 1 roughly chopped Onion, 1/2 cup chopped Cilantro, 1/3 cup of Lime juice, 2 Tbsp minced Garlic, 2 Chipotle peppers, and Salt and Pepper to taste in a blender.
  2. Blend until it's to your desired consistency. For best flavor, let it sit in the fridge for at least two hours.
