I want to apologize right off the bat for not getting more pictures of this sandwich, but I was so hungry, and just the smell of it was making my mouth water! That's a good enough endorsement for this sandwich, right?

Anyways, a friend of mine recently gave me this delicious 'hot' honey, that's infused with chiles to make it spicy and sweet. and I absolutely love it- it might need to become a staple! She said it was really good with nice cheese, so I picked up some Goat cheese (because it was the cheapest 'fancy' cheese at Trader Joe's!), and made myself a grilled cheese sandwich with it and the hot Honey. And... oh my gosh. I couldn't stop thinking about it, ALL day! I was so excited about it, in fact, that I'm posting this recipe only a day later to share with all of you! This time though, I added some sauteed Onions and mushrooms with some extra spices, and WOW. I am 100% addicted to this sandwich, it is definitely going to be a staple in my lunch/dinner rotation.

Since not everybody can buy that special Honey, I made a spread with the cheese, mixed with herbs, Chile powder, and honey. It might sound like an odd combination, but trust me on this one!

Grilled Goat Cheese Sandwich

You'll never want to eat a regular Grilled Cheese again after having these mouthwatering Grilled Goat Cheese Sandwiches! They're packed with sauteed Mushrooms and Onions, then spread with a sweet, spicy, and herbed Goat Cheese spread.

Ingredients

  • Butter (for sauteing and spreading on the sandwich)
  • 8 whole Mushrooms (sliced)
  • 1/2 White or Yellow Onion (thinly sliced)
  • 1 tsp Garlic powder
  • Salt and Pepper to taste
  • 2 tsp Worcestershire sauce
  • 4 Oz plain goat cheese
  • 1 Tbsp Honey
  • 1/2-1 tsp Chile powder (depending on spice tolerance)
  • 1 tsp Dried Oregano
  • 1 tsp Dried Rosemary
  • 4 Medium-sized slices of your bread of choice (I used Sourdough)

Instructions

  1. Start out by sauteing your thinly-sliced 1/2 Onion in a little bit of butter in a frying pan, turned on Medium-Low heat. Let it cook for about 5 minutes, stirring once or twice in that time. Then add the 8 sliced Mushrooms, and cook for about 5 more minutes, until the Mushroom is browned and the Onion is translucent. Season with 1 tsp Garlic Powder, Salt and Pepper to taste, and 2 tsp of Worcestershire sauce.
  2. While that cooks, mix together your Goat Cheese spread by combining 4 Oz of plain goat cheese, 1 Tbsp Honey, 1/2-1 tsp Chile Powder, 1 tsp Dried Oregano, and 1 tsp Dried Rosemary.
  3. When the Mushrooms and Onions are cooked and the Spread is mixed, butter each side of your 4 pieces of bread. On the other side, add the Goat cheese spread, divided evenly between the four pieces of bread. Top one side of each of the sandwiches with the Vegetables, then place the side without the vegetables on top of each one. Cook on medium heat in a frying pan until each side is browned to your likeness. Best served warm.
