Classic Chili

Okay so… I really love chili. It’s just so dang good. It’s savory and hearty, but not too heavy… always a classic! I’ve tried a lot of different recipes over the years, but this year I just decided to make my own and combined all of my favorite elements of each.

This Classic Chili is made by extra flavorful by sauteing all of the spices before hand, then simmered on your stovetop for an extra long time for a perfect depth of flavor. A little heat, mixed in with hearty beans and meat. Top it with Sour Cream and you’re good to go for a perfect Fall dinner!

Classic Chili

Ingredients

  • 1 lb Ground Beef
  • 1 Small Onion, diced
  • 3 Tbsp Minced Garlic
  • 1 Tbsp Chili Powder
  • 2 tsp (each) Cocoa Powder, Ground Cumin and Onion Powder
  • 1 tsp (each) Paprika and Garlic Powder
  • 1 + 1/4 cup Water (divided)
  • 1/4 cup All-Purpose Flour
  • 6oz can Tomato Paste
  • 15oz can Pinto Beans (drained)
  • 15oz can Kidney Beans (drained)
  • 15oz can Black Beans (drained)
  • 4oz can Diced Green Chiles (might want to add less if you're sensitive to spice)
  • 24oz Jar of Pasta Sauce (something mildly flavored, like Garlic, traditional, etc)
  • Salt and Pepper to taste (I would start out with 1 tsp of Salt and go from there)

Instructions

  1. In a large pot, cook your 1lb of Ground Beef on Medium, until no pink is left. Take out the Ground Beef with a slotted spoon, then drain off some of the fat, reserving about 2/3 of it to saute your Onions in.
  2. Add the Small diced Onion in the pot and cook on medium for a few minutes, until it starts to become fragrant and translucent. Add in the 3 Tbsp of Minced Garlic and cook for one more minute. Turn down the heat to Medium low and add the spices to the pot- 1 Tbsp Chili Powder, 2 tsp (each) Cocoa Powder, Ground Cumin and Onion Powder, and 1 tsp (each) Paprika and Garlic Powder. Mix with the Onions and Garlic, and let it cook for a couple minutes to bring out the flavors.
  3. After this, you're going to want to de-glaze the pot by adding 1/4 cup of water, and using a wooden spoon, scrape up whatever brown bits have collected at the bottom. Add in the 1/4 cup of Flour, and whisk together until no chunks remain. Turn the heat to Medium and let it thicken for a couple minutes. Then take the Tomato Paste and whisk in as well.
  4. Next, add the remaining ingredients 15oz can Pinto Beans, 15oz can Kidney Beans, 15oz can Black Beans (all drained), 4oz can Diced Green Chiles, 24oz Jar of Pasta Sauce, Salt and Pepper to taste, and the remaining 1 cup of Water. Mix together, then cover and let simmer on Medium Low for about 45 minutes, stirring occasionally.
  5. Top with Sour Cream, Cheddar Cheese, and Green Onions if you'd like. Enjoy!
