Today I’m sharing one of my favorites recipes I’ve ever created! These Sweet Potato Quinoa patties have been a staple in my house ever since I thought them up- which usually happens way to late at night, when I should be sleeping. Anyone else have their best thoughts at that time?

Anyways, this one is a favorite of mine because it hits all the right notes! They’re versatile - Breakfast, Lunch, Dinner, Brunch… there’s always a good reason to make these! They’re easy- it’s really just a matter of mixing and then frying up all the ingredients together, and then you can set aside the mixture in your fridge to use later. They’re healthy- not only are you getting all these lovely vitamins from the sweet potato and quinoa, if you have any dietary restrictions, I’ve added some substitutes for the dairy and gluten in these. But most importantly, they’re delicious!

These pair well with so many different types of meals! I made this salad from finding various items in my fridge. They add a bit of crunch and sweetness to any salad.

You can also eat them by themselves. They make a simple, gluten free, vegan (if sauce is omitted) breakfast or lunch. Great to share with babies still learning to eat solid foods, too!

My all times favorite way to eat them though is in a breakfast ‘stack’. Top it with Bacon, sliced Avocado, a fried egg and the Jalapeno Lime Ranch. They make a unique Brunch or breakfast food (or, to be honest, I’ve served it to my family for dinner, too!).

These Sweet Potato Quinoa Patties with Jalapeño Lime Ranch are delicious AND nutritious! Read below to get ideas on how to use them. Below there are also optional substitutions to make the patties dairy free, gluten free, and vegan.

Ingredients

  • 1 cup steamed, then mashed Sweet Potatoes
  • 1 cup cooked Quinoa
  • 3 Tbsp All-Purpose Flour, Almond Meal, or Almond Flour
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Paprika
  • 1/4 cup Parmesan cheese, or 1 Tbsp Nutritional Yeast + 3 tbsp additional flour or almond meal, if trying to make dairy free
  • (Optional)Meal Idea Ingredients:
  • Brunch stack: Jalapeno Lime Ranch, Bacon, eggs, and Avcoados
  • Salad: Your choice of greens, pickled Red Onions, Jalapeno Lime Ranch, Avocados, your choice of Nuts ( I used glazed Walnuts)

Instructions

  1. In a medium bowl, combine 1 cup of mashed Sweet Potatoes, 1 cup of cooked quinoa, and 3 tbsp All-Purpose Flour or almond meal
  2. Then sprinkle on top and mix in 1/2 tsp of Salt and Pepper, 1 tsp of Garlic and Onion Powder, 1/4 tsp of Paprika, and 1/4 cup of grated Parmesan cheese (or 1 tbsp of Nutritional Yeast + 3 tbsp flour or almond meal)
  3. Coat a skillet with olive oil in a large skillet, then heat on your stovetop to medium high heat. Form the mixture into patties (makes about 8 2-inch circles), and cook them in a hot pan until browned on each side, about 3 minutes.
