Sausage & Egg Acorn Squash

I love meals that look fancy, but are actually really simple!

This definitely falls into that category. Roasted Acorn squash is so gorgeous, and creates a beautiful little bowl to put your mixture of ground sausage, veggies, and herbs in! And then top it off with a Fried Egg? Man. delicious!

This dinner is Gluten free, and if you omit the sprinkling of cheese on top, it’s dairy free as well! Perfect for anyone with allergies.

Sausage & Egg Acorn Squash

Ingredients

  • 3 Acorn Squash
  • 1 lb Ground Italian Sausage
  • 2 Tbsp Minced garlic
  • 1 red bell pepper
  • 1 Tbsp dried Rosemary
  • Salt and pepper to taste
  • 1/2 tsp Onion Powder
  • 4 Stalks Green Onions
  • 1/2 cup chopped Spinach
  • 1/4 cup beef broth
  • 6 eggs
  • Shredded Mozzarella cheese (optional, for garnishing)

Instructions

  1. Preheat the oven to 400º, then cut your three Acorn Squash down the middle, and then cut a little bit off each end to ensure a flat bottom. Place on a baking sheet and drizzle with olive oil, then sprinkle with Salt and Pepper. Bake for 37-40 minutes, until fork tender.
  2. In a large sauté pan, brown and crumble your 1 lb of ground Italian Sausage on your stovetop on medium heat until no longer pink. Then add the 2 tablespoons of minced garlic, and 1 red bell pepper, Salt and pepper to taste, and 1/2 tsp Onion Powder to the pan and cook until softened.
  3. Now add the 4 stalks of chopped green onion, 1/2 cup of spinach, and let that simmer in a 1/4 cup of Beef Broth for about 5 minutes.
  4. At this point your acorn squash should be done, so pull that out of the oven, and put an equal serving of the meat filling in each squash. Sprinkle with Cheese if you'd like, and crack an egg over each one. Bake for 6-9 more minutes, depending on how well-done you like your eggs- keep in mind it will cook a bit more when you dig into it and it mixes with the hot filling. Wait for about 10 minutes before digging in. Enjoy!
