Why I haven’t shared this recipe before, I’ll never know. BUT here's one of the easiest dinner recipes you’ll ever get from me!

This Instant Pot Taco Soup is a great and easy dinner for a weeknight, to bring to a potluck, and makes a great freezer meal! I’ve made this before and brought to sick friends, or froze it and passed it along to Moms who have just had a baby… it’s nothing fancy, but it hits the spot and is flavorful!

This can be made by browning some meat, throwing in a few cans of beans and corn, and pressure cooking it. That’s it!

Truly, SO easy and versatile!

Ingredients

  • 1 lb Ground Beef (Can also substitute Ground Turkey, Ground chicken, shredded or chopped chicken, or skip the meat altogether!)
  • 2 Tbsp Ranch Seasoning (equal to 1 packet)
  • 2 Tbsp Taco Seasoning (equal to 1 packet)
  • 15 oz can of Corn (drained)
  • 15oz can of Black Beans (undrained)
  • 15oz can of Pinto Beans (undrained)
  • 4 cups Water
  • 2 tsp Beef Bullion
  • 2 tsp Salt
  • Additional Salt & Pepper (to taste)
  • Optional Toppings: Sour Cream, Shredded Cheddar Cheese, Sliced Green Onions, Tortilla Chips, Avocado, and/or Cilantro.

Instructions

  1. Turn on the sauté setting on your Instant Pot and place the Ground beef in there. Cook it until its crumbled and Browned.
  2. Drain about half the fat from the Ground Beef, then add in the 2 Tbsp Ranch Seasoning and 2 Tbsp Taco Seasoning. Mix well, then add in the remaining ingredients -15 oz can of Corn (drained), 15oz can of Black Beans (undrained), 15oz can of Pinto Beans (undrained), 4 cups Water, 2 tsp Beef Bullion, 2 tsp Salt, and Additional Salt & Pepper (to taste).
  3. Now change the setting to Pressure Cook and cook it for 15 minutes. Once it's pressure cooked for 15 minutes, let it have a natural pressure release for 10 minutes, then release the remaining pressure manually.
  4. Mix it together again, top with the additional toppings- Sour Cream, Shredded Cheddar Cheese, Sliced Green Onions, Tortilla Chips, Avocado, and/or Cilantro, and serve. This meal can also be frozen for later use.
