Chocolate Fruit Mousse

Okay. You ready for an easy dessert recipe that’s delicious and looks beautiful? Try mousse!

Now before you start telling yourself that mousse is too difficult and finicky, think again! I too have had a hard time with this dessert-in the past I was barely ever successful in my attempts to make it. But this one is different for two reasons. The first is that it’s made with melted chocolate (White Chocolate or Semi-sweet), which naturally firms up when placed in cold temperatures. The second is because you whip up that chocolate and heavy cream with finely crushed freeze-dried fruit. A lot of fruit, (especially the kind you find at the grocery store) have natural pectin in it, meaning that it will naturally gel together. The combination of these two make for not only a delightful taste, but a mousse that is hard to mess up, since you’ve got two ingredients that will naturally firm up! Plus, it all comes together in your blender in just a couple minutes.

Now the other beautiful thing about this recipe is that it’s versatile- You can try it with any type of chocolate and freeze-dried (not dried) fruit you have on hand or can find in the store. Target has a wonderful selection of freeze-dried fruits with their Good & Gather brand, but you can also find a couple different ones at Walmart, Trader Joe’s, and I’ve even seen small packs of them at the Dollar Tree! To give you some ideas on flavors, here’s just a few that I’ve thought of/tried myself:

See how many combinations there are? It’s truly whatever ‘floats your boat’! I’ve even made these dairy-free for a friend- you just have to track down some dairy-free heavy cream (I used the ‘Silk’ brand), and Dairy-free chocolate chips are getting easier to find. Plus, it’s naturally Gluten free and low on sugar. Just remember that some will be thicker than others, depending on how much natural pectin is in each fruit.

These are pretty rich, so I each portion size is pretty small. It’s a great dessert to serve at large gatherings (I just made these for a girls night I hosted), and these would look absolutely gorgeous sitting on the table at a baby or bridal shower. Chocolate Fruit Mousse

Chocolate Fruit Mousse

This rich dessert is simplified by using Freeze-dried fruit and chocolate chips- whatever kind you would like. You can get creative with the combinations, but they're always sure to be a showstopper dessert!

Ingredients

  • 1 ounce Freeze Dried fruit*
  • 1 cup Heavy Whipping Cream
  • 5 ounces White, Dark, or Semi-sweet Chocolate Chips
  • 3 Tbsp Water
  • 1 tsp Granulated sugar
  • 2 Tsp Lime or Lemon juice
  • Pinch of table Salt

Instructions

  1. Blend 1 ounce of freeze dried fruit until most of it is ground into a powder- this should only take a few seconds. Place the powder into a bowl- it's okay if there's some at the bottom, just get out as much as you can.
  2. Pour 1 cup of heavy cream into your blender on medium and blend in 15 second increments until thickened, making sure to wipe down the sides. Pour the fruit 'powder' back into the blender with the cream.
  3. Now melt 5 ounces of White, Dark, or Semi-sweet Chocolate Chips mixed with 3 tablespoons of water in the microwave.
  4. Combine the melted white chocolate, pinch of salt, 2 tsp of lime juice, and 1 tsp of sugar into the blender. Blend on medium-high for 1-2 minutes until thickened, making sure to scrape down the sides once or twice. You can scoop the mousse into serving dishes, then refrigerate, or chill first and then pipe it into your dishes. Just make sure to chill for at least 4 hours. Serves 3-4, depending on portion sizes.
