Apple Cider Snickerdoodles

This is one of my favorite recipes I’ve ever created!

I developed this one last year- I dropped my son off at preschool, my daughter was off at Kindergarten, and it was a couple hours that week that I’d have only one kid. Fall was in full swing, and I couldn’t get the taste of Apple Cider off my mind. And an Apple Cider Snickerdoodle seemed simply perfect! So in the 2 hours I had with only one kid, I developed these. And in just enough time to drop them off to my son’s kindergarten teacher, too!

I knew it was good, but wasn’t sure if I was being biased… until my son’s preschool teacher texted me and begged for a recipe- her son declared that they were the best cookies he’d ever had. That was a major clue I was onto something good!

These cookies just scream fall, and are totally addicting. Sure to be a hit on whatever you bake them for! There’s the slight tang from Apple Cider mixture, some sweetness, and it’s all encapsulated in a soft cookie. This is a can’t-miss recipe!

Apple Cider Snickerdoodles

Apple Cider Snickerdoodles

Ingredients

  • 1 cup Brown Sugar
  • 3 0.74 Oz packets of Apple Cider Drink mix (about one heaping 1/4 cup)
  • 1 cup Unsalted Butter (softened)
  • 1 Egg
  • 2 tsp Vanilla extract
  • 2 Cups All-Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp table salt
  • 2 Tbsp Brown Sugar
  • 2 Tbsp Apple Cider Drink mix
  • 2 tsp Ground Cinnamon

Instructions

  1. Preheat the oven to 350 degrees. Add 1 cup of brown sugar, 3 0.74 Oz packets of Apple Cider Drink mix (about one heaping 1/4 cup) , and the 1 cup of the softened butter to a large bowl. Beat with an electric mixer until fluffy.
  2. Add in 1 egg and 2 tsp vanilla and mix together. Then add the 2 cup of All-purpose flour, 1/2 tsp of baking powder, 1/2 tsp of baking soda, and 1/4 tsp of salt. Beat until just combined.
  3. In a small bowl, mix the 2 Tbsp of Brown Sugar, 2 Tbsp of Apple Cider drink mix, and 2 tsp Ground Cinnamon. Scoop each cookie onto a greased baking sheet (it should make about 30 medium cookies), then roll them into the cinnamon sugar mixture. Do not press down- keep it in a ball.
  4. Bake for 8-10 minutes, then let them sit on the baking sheet for about 5 minutes before transferring them to a cooling rack. Store in an airtight container.
